OATSSSS for all!! Oat pancakes are one of my favorite things to make for breakfast if I'm feeling a little fancyyy. They are so simple and delicious and full of good, hearty ingredients. Plus, they are versatile with what you pair them with! I made oat pancakes for brunch with some friends and they were a hit! First off, it only took me about 10 mins to make them (max!) and I paired them with a sweet and tangy fruit compote.
Oat pancakes are a perfect alternative for the traditional flour pancakes because they contain complex carbs which keep you full for longer. These pancakes are also made with eggs for added protein and sustained energy. Oh! And a banana! The banana adds a touch of sweetness and makes maple syrup/other sweet toppings totally optional!

Recipe
Pancake Ingredients
- 1/2 cup oats
- 1 1/2 - 2 ripe bananas
- 2 eggs
- 1 tbsp honey
- 1 tbsp chia seeds
- 1/2 tsp vanilla extract
- pinch of cinnamon
Directions
In a blender, combine all ingredients and blend until relatively smooth. The batter will not be completely smooth. Make pancakes to desired size on a nonstick pan/well greased pan. Simple as that.
Compote Ingredients
- 1 cup raspberries (fresh or frozen)
- 1 peach, cut into small cubes
- 3 tbsp honey
Directions
In a small saucepan bring fruit and honey to a boil, reduce heat, and let simmer until mixture has thickened slightly. Use while warm or store in fridge for a jam-like consistency!
