Healthy Gingerbread Granola
2:51:00 PMWhen I think of Christmas I think of all of the amazing smells that come along with the season. Pine, fires, peppermint, and best of all, gingerbread! I have created a granola recipe that is perfect for the holiday season. It is packed with flavor and warm spices, along with a touch of molasses for sweetness and rich gingerbread flavor.
Enjoy this granola with vanilla Greek yogurt or vanilla ice cream. Or, serve with a sliced banana and milk as a cereal substitute. The best part about this granola recipe is that it can be altered in many ways to fit your dietary needs/preferences. For example, the pecans can be replaced with almonds or another type of nut. The raisins can be swapped for dried cranberries. If you want to add coconut that would work great too!

Pumpkin Spice Granola
Recipe
Ingredients
- 4 cups rolled oats
- 1 cup roasted and salted pecan halves, roughly chopped
- 2/3 cup raisins
- pinch of salt
- 3/4 tsp cinnamon
- 1/4 tsp ginger
- 1/2 tsp allspice
- 1/4 tsp nutmeg
- 1/4 tsp cloves
- 1/3 cup molasses
- 2 tbsp honey
- 1/4 cup canola oil
- 1 tsp vanilla extract
Directions
Preheat the oven to 350 degrees F. In a large bowl, combine the oats, pecans, raisins, salt, and spices. In a small bowl microwave the molasses, honey, oil, and vanilla for 30 seconds and then whisk together until combined. Pour liquid mixture over the dry ingredients and stir until all ingredients are coated with the liquid mixture. Cover a baking sheet with aluminum foil and stray with canola spray. Spread granola evenly on the pan and bake for 25-30 minutes, until golden brown. Let granola cool completely before transferring to an airtight container.
