Baked Falafel with Tzatziki Sauce

Healthy, easy and delicious baked falafel with fresh dill tzatziki sauce!

This fresh and light take on traditional fried falafel is just as yummy and way better for you! This baked falafel recipe is incredibly easy. Simply add all of your ingredients to a food processor and watch it do the work for you. I enjoyed my falafel with a side of hummus and veggies, however, it would taste great with pita bread, on a salad, or even by itself!

Since being at college I have been craving a greek bowl from Cava (a fast casual greek restaurant where I'm from). Specifically, I have been wanting their amazing falafel. As soon I got home for winter break and had access to an oven I was in the kitchen whipping up this easy falafel recipe to satisfy my craving. Better yet, this recipe is lower in fat and calories than traditional falafel because it is baked rather than fried in oil.

Give it a try and give your favorite falafel a run for its money!

Recipe

Ingredients:

Falafel

  • 15 oz can chickpeas, drained
  • 2 tablespoons flour
  • 2 large garlic cloves, minced
  • 1/4 cup fresh parsley, chopped
  • 1 egg
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp chili powder
  • 1/4 tsp salt
  • 1/4 tsp pepper

Tzatziki Sauce

  • 1/2 medium cucumber, shredded
  • 1/2 cup plain nonfat greek yogurt
  • 1/2 tsp dried dill weed (or 1 tsp fresh dill)
  • salt to taste

Directions:

For the falafel, preheat oven to 400 degrees F. In a food processor, add all ingredients and blend until well combined and fairly smooth (not completely smooth). On a greased baking sheet, spoon tablespoon sized balls of the falafel mixture onto the baking sheet. Spray tops of falafel with olive oil cooking spray (canola spray would work) and bake for 16-18 mins. Falafel should be golden brown.

For the tzatziki sauce, shred the cucumber with a grater and combine in a bowl with the greek yogurt. Add the dill weed and stir until combined. Add salt to taste.

Enjoy!
