Healthy, Hearty Breakfast Ideas

Recipe 1: Low Carb Pancakes
These pancakes are sooo simple to make! In fact, they can be made with as little as three ingredients. I like to spice them up with fresh fruit, nuts, and spices; but they are amazing on their own! If you are looking for a low carb breakfast that is also high in protein then this recipe is great for you. These pancakes fill you up without making you feel too full and heavy. They are light and SUPER simple to make.
Here is the recipe:
For the pancakes:
- 1 ripe banana
- 2 eggs, or 1/2 cup of egg whites (for a low fat option)
- 1/8 teaspoon baking powder
- cinnamon (optional)
- blueberries (optional)
You can put all kinds of things in your pancakes to make them your own. Some other things that you can put in your pancakes are: nuts, chocolate chips, etc.
To top it off:
- strawberries (or any other fresh fruit; such as bananas, blueberries, blackberries, etc.)
- pecans (or any other type of nut)
- natural maple syrup
Directions:
1. In a blender, combine the banana, eggs, baking powder, and cinnamon. Blend until smooth.
2. Heat up a griddle, and spray with canola cooking spray.
3. Pour about 1/4 cup pancake batter onto griddle.
4. Add blueberries to the pancakes.
5. Wait until the bottom of the pancakes are golden brown, then flip and allow the other side to brown.
6. Remove from heat, add toppings, and enjoy!
You can add as many or as few things as you would like to these pancakes, that's the beauty of it! I love to have these in the summer because they are light and last me through the morning so I'm not tempted to snack. Also, summertime is when all of the yummy fresh fruits are in season, and they make this breakfast 100x better :) These pancakes are naturally sweet from the banana so you don't need to add very much syrup (you can even have them without syrup if you want to). They have a slight banana taste, but it is not overpowering at all, so even non-banana lovers will enjoy these pancakes.
I made my pancakes with blueberries in them and topped them off with fresh strawberries, pecans, and a bit of maple syrup.
Recipe 2: Fruity and Nutty Oatmeal
This oatmeal will stick with you throughout the whole morning. It is full of protein and micronutrients. It's so good, even your Grandma will want to know how you made it :)
Recipe:
Ingredients:
- 1 packet of Trader Joe's Oatmeal Complete instant oatmeal- 1/4 cup almond milk
- 1/4 cup frozen (or fresh) blueberries
- 2 T walnuts
- 1/2 banana
- 1 T raisons
- 3 T granola
- honey (to taste)
Directions:
1. Make oatmeal following the instructions on the package.
2. Add almond milk, and give it a quick stir.
3. Add desired toppings, drizzle on some honey, and enjoy!
Tip:
Add frozen blueberries rather than fresh to help cool down your oatmeal faster so you don't burn your mouth.
I love to add lots of toppings to my oatmeal. The blueberries are full of antioxidants, the banana is full of potassium, and the walnuts have healthy fats; so you are working all kinds of healthy things into your diet when you eat this. I like to add granola on top of my oatmeal for an added crunch, and the frozen blueberries allow me to eat my breakfast right away when I am rushing to get to school. You should definitely try this oatmeal, you won't regret it!
I made my oatmeal with salty, and sweet toppings... it was delicious! Also, I arranged my toppings in a pretty pattern, it makes it just that much better!
