Easy & Delicious Healthy Banana Bread

Banana bread which coconut!? Whaaaaa? Never heard that combination before! Well now you have, and let me tell ya, it's a darn good combo. I've created this banana bread recipe that tastes amazing, is moist, and also has less sugar and oil than typical recipes. The addition of fiber packed ground flax will keep you feeling fuller for longer. 

The great thing about bread is that you can pick and choose mix-ins to your liking! I chose to include coconut, chocolate chips, and walnuts; but, feel free to try out other things! 

This bread is great for breakfast on the go, a midday snack, or even a healthier dessert alternative! 


Recipe

Ingredients 


  • 2 ripe bananas, mashed
  • 1/4 cup vegetable oil 
  • 1/3 cup honey
  • 2 eggs
  • 1/4 cup milk
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • pinch of salt
  • 1/2 tsp cinnamon 
  • 1/4 cup ground flax
  • 1 1/4 cup flour 
  • 1/3 cup unsweetened shredded coconut 
  • 1/2 cup semi-sweet chocolate chips
  • 1/3 cup chopped walnuts

Directions 

Preheat the oven to 325 degrees F. In a large mixing bowl, whisk together the mashed banana, oil, eggs, honey, milk, and vanilla. Add the baking soda, salt, cinnamon, flax, and flour and stir until well combined. Mixture may be a bit lumpy and that is okay. Fold in the coconut, chocolate chips, and walnuts until dispersed throughout batter. Grease a 5x9in loaf pan and pour batter into the loaf pan. Bake for 55-60 minutes, or until a toothpick comes out clean when inserted into the center of the loaf. Let the bread cool in the pan for about 10 minutes before transferring to a cooling rack. Let the bread cool for another 30 minutes or so before cutting into it.
