Pinto Bean Garlic Hummus

Okay hummus is seriously the most versatile food. You can eat it with or alongside practically anything. Good with vegetables? Check. Good with pita bread? Check. Good on sandwiches? Check. Good on salads? Check. Good on pretzels? Check. I could go on and on. This unique take on traditional chickpea hummus is perfect if you have allergies, are feeling adventurous, or don't have chickpeas on hand and are too lazy to make a run to the grocery store. 


If you would rather opt for garlic hummus made with chickpeas, that totally works too! Just swap out the pinto beans for the same amount of chickpeas and you are good to go! 

Not only is this pinto bean hummus tasty it is also a great source of protein. Perfect for vegetarians and vegans who are often looking for ways to add protein to their diets.

Recipe 

Ingredients


  • 15oz can pinto beans*
  • 3 cloves garlic, minced
  • handful of fresh parsley, chopped
  • 1 T lemon juice
  • 1 T tahini (or substitute)
  • 1/4 cup olive oil
  • salt to taste

* pinto beans can easily be substituted for chickpeas for a more traditional hummus flavor!


Directions

In a food processor, combine all ingredients and blend until smooth. Easy as that.
